Certified by the Consortium Vacche Rosse (a cooperative of farmers who process milk exclusively from the Reggiana breed), is a product PDO it has been awarded the Protected Designation of Origin status, meaning that it can be produced today just as it was eight centuries ago, using only essential, genuine ingredients: the finest milk from the typical area, fire and rennet, using traditional methods and the art and wisdom of the cheese maker. It takes 14 liters of milk to make one kilo of Parmigiano Reggiano.

The production of Parmigiano Reggiano Vacche Rosse is subject to strict regulations: Vacche Rosse cows are fed exclusively on natural products such as hay, grass and certified non-GMO feed. The use of any feeding techniques that could force production is prohibited, and the welfare of the animals is given the utmost attention. This is also reflected in the age of the animals, which often easily exceed 10 years, a rarity in other types of farming.

The result of this process is a PDO Parmigiano Reggiano with a sweet, delicate and persistent flavor despite its long aging. It is distinguished by its characteristic straw yellow color, elastic texture and intense but delicate aroma.
