Of all the honeys that of Acacia is the most delicate, presenting itself with a very light yellow and almost transparent colour. It has a very low crystallization rate and remains liquid for a very long time due to a higher concentration of fructose than glucose.

The scent of Acacia honey is light, tending towards floral and vanilla, while on the palate it shines with sweetness and an almost non-existent delicate persistence that cradles the ingredients with which it is combined.
