Traditional Balsamic Vinegar of Modena PDO is a product with unique and inimitable characteristics, and for this reason it is considered one of the most renowned and prized dressings in the world. Its origins date back to the XVII century, when it was consumed as a digestive at the end of a meal, in small glasses. Over time it has found use in the menus of great international chefs.
Acetaia Guerzoni made this magnificent product even more valuable, by using exclusively organic and biodynamic grapes. The Guerzoni vinegar is therefore an organic (certified by Mipaaf) and biodynamic (certified by Demeter) product.
There are specific guidelines to follow for its production and ageing process, which takes places in barrels of different types and dimensions.
The type of wood of which the barrel is made gives the vinegar unmistakable properties and aromas.
