Strolghino is the most fashionable of the local salami: small in size, it is perfect for a happy hour with your friends. The origin of its name derives from the term strolga, meaning witch or fortune teller in the Parmesan dialect.
Tradition holds that the production of strolghino was used, in fact, to predict the ageing process of larger-sized cured meats, especially culatello.
Strolghino is made with the trimming of the lean and precious parts of the pig's thigh; the meat is salted and peppered and then put in a natural casing, tied on the head with a string, to facilitate drying and maturation. Its maturation takes about 20 days.
