The Amatriciana sauce is one of the most popular sauces of the Italian tradition, known all over the world and always present in the menus of restaurants in Rome and its surroundings.
In fact, the recipe was born in Amatrice, a town in the province of Rieti to which it owes its name.
After almost a century of history, the Amatriciana sauce continues to be appreciated everywhere, despite its simplicity. Indeed, it is a sauce made with fresh Italian tomatoes and a few other ingredients: cheek lard (following the classic recipe), chilli and pecorino.
