Basil Pesto is a traditional condiment of Liguria. The name of this sauce derives from the method of preparation: the pounding. Basil leaves, coarse salt, garlic, pine nuts, Extra Virgin Olive Oil, Pecorino and Parmigiano Reggiano are the ingredients that are pounded in the traditional marble mortar, strictly by hand with a wooden pestle. It is a raw sauce, where the ingredients are mixed cold and therefore maintain their organoleptic characteristics.
It is said that, in the Middle Ages, spices were consumed especially by privileged people, while poor people used aromatic herbs to flavour soups. The first basil pesto, according to a legend, was prepared by a friar from Prà (Genoa), in the convent of San Basilio. In these areas, thanks to the favourable climatic conditions, the aromatic herb used (basilium) has an exclusive aroma and flavour.
The dried tomato pesto, on the other hand, is of Sicilian origins. It is a very simple recipe, in which the tomatoes are washed, cut, salted and dried in the sun, before being pounded.
In this case too, the product is born from ancient traditions, dating back to a time when modern methods of preserving tomato sauce and greenhouse cultivation did not exist. Tomatoes were thus processed in the warm season, then they were left to dry, and stored to be used at a later time, throughout the year.
The processing techniques and the use of carefully selected raw materials make the products of the Bio line valuable, healthy and genuine.

The two types of pesto are ideal not only for dressing pasta or rice, but also to spread on slices of bread to create appetizing aperitifs and, why not, to be used as a topping on pizza.
