Pecorino Toscano PDO is an Italian cheese produced with sheep's milk which, on the 2nd of July 1996, obtained the protected designation of origin (PDO).
The origins of Pecorino Toscano date back to the era of the Etruscans and the Romans; at that time, the art of cheese making was improved in order to meet the need to preserve a product with high nutritional values.
The Etruscans were the first ones who used vegetable rennet and produced big wheels, suited to satisfy families for larger periods.
In some reports it is described as one of the most popular cheeses at Lorenzo de Medici’s banquets.
The guidelines establish all stages of production; from the milking to the ageing. The milk must be of sheep and come from the areas of origin: Tuscany and some neighboring municipalities of Lazio and Liguria.
The fresh Pecorino Toscano is a young cheese, with an aging period of at least 20 days and up to 45/60 days; cheese makers use only calf rennet and the salting process takes just one day.
The taste of Pecorino is quite delicate, so it can satisfy even the most demanding palates. The combination of tradition and modern technology allows to obtain a product of excellence. Fresh Pecorino Toscano has a cylindrical shape, a thin crust that contains an irresistible soft and sweet paste that reminds butter and hay.

Pecorino Toscano is a soft cheese made with sheep’s milk and which still smells of milk. It is suitable also for younger consumers and for those who love delicate flavours. It is good to be eaten alone during a happy hour, for example combined with honey, jams and caramelized fruit; also, it is delicious in salads with some drops of extra virgin olive oil. If consumed alone, you will perceive all the good characteriscs of a cheese produced with good sheep's milk. The product is delicate and different from other sheep cheeses which generally have a stronger taste tending to spicy and savoury.
How to store it: it can be stored at a temperature between +4° and +8 °, wrapped in paper for food.
